PENGARUH MARINASI DAGING AYAM LAYER AFKIR DENGAN SARI BONGGOL NANAS TERHADAP KEEMPUKAN DAN pH ABON
Abstract
Penelitian ini bertujuan untuk mengetahui dan menganalisis pengaruh marinasi daging ayam layer afkir dengan sari bonggol nanas terhadap keempukan dan pH abon. Materi yang digunakan adalah daging ayam layer afkir strain Lohman Brown dengan tingkat produksi dibawah 30%, diambil bagian paha dengan total berat 4.800 gram dan sari bonggol nanas varietas Smooth Cayenne sebanyak 2160 ml. Metode yang digunakan adalah eksperimental menggunakan Rancangan Acak Lengkap (RAL) dengan 4 perlakuan dan 6 ulangan. Perlakuan berupa perbedaan konsentrasi sari bonggol nanas sebagai bahan marinasi, yaitu P0 (tanpa marinasi/kontrol), P1 (25%), P2 (30%), dan P3 (35%), dengan metode perendaman pada suhu ruang selama 30 menit. Variabel yang diamati yaitu keempukan dan pH abon daging ayam layer afkir. Data dianalisis menggunakan analisis ragam (ANOVA) dan dilanjutkan uji BNT (Beda Nyata Terkecil) apabila terdapat adanya pengaruh. Hasil penelitian menunjukkan bahwa marinasi daging ayam layer afkir dengan sari bonggol nanas berpengaruh sangat nyata (P<0,01) terhadap keempukan dan pH abon. Keempukan abon meningkat dengan peningkatan konsentrasi sari bonggol nanas, dengan nilai modus P0 (4a), P1 (5ab), P2 (6bc), dan P3 (7c). pH abon menurun dengan nilai rata-rata P3 (6,31a), P2 (6,31a), P0 (6,64b), dan P1 (6,76b). Kesimpulan bahwa marinasi dengan sari bonggol nanas mempengaruhi keempukan dan pH abon daging ayam layer afkir. Pada marinasi dengan konsentrasi 35% sari bonggol nanas menghasilkan abon dengan tingkat keempukan nilai 7 (empuk) dan pada nilai pH yang didapatkan dengan nilai yaitu 6,31.

THE EFFECT OF CULLED LAYING HEN MEAT MARINATION WITH PINEAPPLE CORE JUICE ON THE TENDERNESS AND pH OF CHICKEN FLOSS
Abstract
This study aims to determine and analyze the effect of marination culled laying hen meat with pineapple core juice on the tenderness and pH of chicken floss. The materials used were thigh meat from Lohman Brown culled laying hen meat (egg production below 30%), totaling 4,800 grams, and Smooth Cayenne pineapple core juice totaling 2,160 ml. The method used was experimental, employing a Completely Randomized Design (CRD) with 4 treatments and 6 replications. The treatments consisted of different concentrations of pineapple core juice as the marination agent: P0 (no marination/control), P1 (25%), P2 (30%), and P3 (35%), with soaking carried out at room temperature for 30 minutes. The variables observed were the tenderness and pH of chicken floss. Data were analyzed using analysis of variance (ANOVA), followed by the Least Significant Difference (LSD) test where significant effects were found. The results showed that marination culled laying hen meat with pineapple core juice had a highly significant effect (P<0.01) on the tenderness and pH of chicken floss. Tenderness of chicken floss increased with increasing concentration of pineapple core juice, with modal values of P0 (4a), P1 (5ab), P2 (6bc), and P3 (7c). The pH of chicken floss decreased, with mean values of P3 (6.31a), P2 (6.31a), P0 (6.64b), and P1 (6.76b). It was concluded that marination with pineapple core juice affected the tenderness and pH of chicken floss culled laying hen meat. Marination at a concentration of 35% pineapple core juice produced chicken floss with a tenderness score of 7 (tender) and a pH value of 6.31.
