KONSUMSI PANGAN SUMBER KARBOHIDRAT RUMAH TANGGA PERKOTAAN INDONESIA

Abstract


Food security is a strategic aspect in supporting the welfare and socioeconomic stability ofcommunities, especially in urban areas with high food consumption dynamics. This studyaims to describe household consumption of carbohydrate food sources in Indonesian citiesand assess the position of rice compared to other carbohydrate sources. The study uses aquantitative approach with descriptive statistical analysis. The data used is secondary datafrom SUSENAS in 2024, covering 198,387 households. The results of the analysis showthat carbohydrate consumption in urban areas is still dominated by rice, with an averagehousehold consumption of 21.44 kg per month and a consumption percentage of 83.44percent. The consumption of modern processed foods such as noodles (19.6 kg perhousehold per month) and wheat flour (8.52 kg per household per month) is relatively high,reflecting a trend toward diversification of carbohydrate consumption in urban areas.Meanwhile, consumption of other non-rice carbohydrate sources such as corn kernels,cassava, sweet potatoes, sago, and taro is still relatively low and serves as a complementaryfood. The results of this study are expected to provide an empirical basis for the formulationof food security policies in Indonesian cities.
