Analisis Nilai Tambah Keripik Jamur Muchu-Muchu Pada UMKM Jamur Mekar Mandiri di Desa Pandesari Kecamatan Pujon

Abstract

The price of oyster mushrooms at the beginning of the UMKM was Rp. 7,500.00. Due to an abundant harvest, they were processed into mushroom chips. Currently, the selling price of muchu-muchu mushroom chips is Rp. 14,000.00. This research aims to determine the added value of muchu-muchu mushroom chips obtained by the UMKM Jamur Mekar Mandiri located in Pandesari Village, Pujon District, Malang Regency. The researcher used primary data obtained from interviews with the owner and workers of the UMKM, who served as key informants. Data analysis used the Hayami method by calculating costs, revenues, and added value. From the calculation results, the average total cost of raw materials is Rp. 14,000.00/kg and the cost of other input contributions is Rp. 19,255.00/production. The labor income obtained in the processing of mushroom chips is Rp 10,000.00/kg. The percentage of the labor share or the reward received by the labor from the added value is 43.97 percent. The added value obtained from processing 15 kg of oyster mushrooms into chips is Rp 22,745.00/kg. The value-added ratio obtained is 40.6 percent, indicating that this value is more than 40 percent and falls into the high category. Looking at the analysis results, it can be concluded that processing oyster mushrooms into mushroom chips is profitable, and the UMKM product is worth developing by adding new flavor variants.
