PREFERENSI KONSUMEN TERHADAP NASI TIWUL INSTAN PENGGANTI BERAS SEBAGAI SUMBER KARBOHIDRAT MASYARAKAT DI KOTA MALANG

Abstract

Rice is a staple carbohydrate source for the Indonesian population so that the dependency rate on rice is 90% (Central Bureau of Statistics, 2023). The high dependence on rice can be reduced by food diversification, one of which is tiwul as a substitute for rice as a carbohydrate source, while people have certain preferences in consuming daily carbohydrate sources. The purpose of this research was to determine consumer preferences for the combination of tiwul rice as a substitute for rice as a source of carbohydrates for the society in Malang City. Determination of location taking is purposive sampling in Malang City while sampling using accidental sampling method of 100 respondents. The method used in this research is conjoin analysis. The results of the research indicate that consumer preferences for the combination of tiwul rice, namely preferring dry instant tiwul rice products which have a brown color with a savory taste and chewy texture and a low price of Rp. 10,250/400gram.
